Recipe #1: Melon Gazpacho with White Tea

Ingredients for 2 people
- 1 melon
- Leonia White Tea (40 ml)
- 2 tsp white balsamic vinegar
- 1 handful of roasted flaked almonds
- salt, pepper, Espelette pepper
- a few basil leaves
Preparation

Cut the melon in half and remove the seeds. Remove the skin from the melon and cut the flesh into pieces.

Prepare your White Tea in a caraffe of boiling water, then let it cool.

Blend the melon with 40 ml of white tea, the vinegar, and a hint of Espelette pepper. Season with salt and pepper.

Serve with a few roasted flaked almonds, a pinch of Espelette pepper and chopped basil.
Recipe No. 2: Summer Vegetable Tagine with White Tea
A healthy, antioxidant recipe made with seasonal vegetables and white tea.
Ingredients for 2 people
- Leonia White Tea
- 1/2 red onion
- 1 zucchini
- 1 eggplant
- 2 tomatoes
- A few sprigs of coriander
- 1 handful of flaked almonds
- 1 handful of raisins
- 2 ladles of brewed Leonia white tea
- 1 tsp ras el hanout
- 1 tsp ginger
- 1 pinch of cinnamon
- 1 pinch of chili pepper
- Olive oil, salt and pepper

Cut the tomato, eggplant and zucchini into small pieces.

Brew the White Tea in a caraffe of boiling water.

Toast the spices, then add 1 tbsp of olive oil, the chopped onion, and the washed and chopped vegetables. Brown. Season with salt and pepper.

Cover with white tea, bring to a boil then reduce heat and cook for 25 minutes for crispy vegetables.

Serve with raisins, toasted flaked almonds and chopped coriander.
Recipe #3: The Alcohol-Free Pink White Tea Margarita
A unique, healthy and refreshing cocktail with sweet fruity and tangy notes.
Ingredients for 2 people
- 3 ladles of iced infused Léonia white tea
- 1 tsp brown sugar (optional)
- 1/2 glass of strawberry syrup
- 1 lemon, zested and squeezed
- Ice cubes
Preparation
1. Brew some white tea and place it in the refrigerator until chilled.
2. In a shaker, mix the tea, strawberry syrup, zest, lemon juice and sugar.
3. Shake and pour into glasses, add ice cubes.
